I've decided we've been friends long enough now to share my secret to perfect Jo Jo's or Steak Fries. They are actually pretty easy to make and definitely worth the effort!

*Warning* These are super duper addicting and once you make them you'll totally be hooked!

Everything about these are so good they won't last long!

We made these last week to go with the Loaded Sharp Cheddar and Black Forest Ham Grilled Cheese Sandwich I will be sharing on Sunday for #SundaySupper!

These are definitely my favorite fries because there's just something about the seasoned coating with the soft interior of the fry I can never get enough of.

I don't know why I always dread frying things because it really isn't any messier then good old bacon and worth the clean up!

I like using a russet potatoes to make Jo Jo potatoes and find the standard sized 5lb bag of potatoes at the grocery store about the right size avoid the humongous bagged ones from Costco.

If you happen to be using humongous potatoes you will need to cut them smaller.

Scrub potatoes well and cut out any bad parts but leave skin intact.

Slice 6-7 medium-small potatoes into half. Then slice each half into half and then slice that half into half.

Gosh that was a mouthful!

Soak potatoes in a large bowl of cold water for 20 minutes.

In a large bowl or ziploc bag combine:

  • 1 cup Flour
  • 1/3 cup Cornstarch
  • 2 teaspoons Sea Salt
  • 1 teaspoon Granulated Garlic
  • 1 teaspoon Rosemary
  • 1/4 teaspoon Thyme
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Pepper

Mix until well combined.

Drain potatoes but Do Not dry.

Toss potatoes in seasoned flour mixture.

One of my big secrets is to allow the potatoes to rest for 15-20 minutes before frying.

Potatoes will look like this when ready to fry. If any of the potatoes near the bottom become sticky just toss a little more flour over potatoes.

While potatoes are resting heat high temperature cooking oil to 350 to 375 degrees in a heavy duty deep pan like cast iron.

You will need about 3-4 inches of oil.

I like using avocado oil or coconut oil when I fry because it has a high smoke point.

Carefully place Jo Jo's in hot oil in a single layer.

Please be careful not to burn yourself and don't leave pan in a place small children could reach unattended.

Cook Jo Jo's for about 5-7 minutes and then flip potatoes over.

Cook until potatoes are golden brown of both sides.

To check for doness remove a Jo Jo and slice through the center to make sure inside is cooked through.

Place Jo Jo's on a cookie sheet lined with paper towels and keep warm in a 200 degree oven until all the Jo Jo's are cooked.

Serve Jo Jo Potatoes with plenty of your favorite Ranch, Fry Sauce or Ketchup.

How to make Seasoned Homemade JoJo Potatoes or Steak Fries Recipe from Serena Bakes Simply From Scratch.

Ingredients

  • 7 whole Medium-Small Sized Russet Potatoes
  • 1 cup All-Purpose Flour
  • 1/3 cup Cornstarch
  • 2 teaspoons Salt
  • 1/2 teaspoon Black Pepper, Fresh Ground
  • 1 teaspoon Granulated Garlic
  • 1 teaspoon Dried Rosemary
  • 1/2 teaspoon Smoked Paprika
  • 1/2 teaspoon Chili Powder
  • High Heat Cooking Oil (I used Coconut Oil)

Instructions

  1. Scrub potatoes well and cut out any bad parts but leave skin intact.
  2. Slice each potato in half. Slice each half in half and then half again.
  3. Place in a large bowl and cover potatoes with cold water. Soak sliced potatoes for 20 minutes.
  4. In a large bowl or ziploc bag add flour, cornstarch, salt, pepper, garlic, rosemary, thyme, paprika and chili powder. Mix until well combined.
  5. Drain potatoes but do not dry and add to flour mixture. Toss until well coated. Allow potatoes to rest 15-20 minutes in flour mixture before frying. If any of the potatoes stick together sprinkle with a little more flour.
  6. While potatoes rest heat 3-4 inches of cooking oil in a heavy duty deep frying pan until 350-375 degrees.
  7. Carefully add potatoes in a single layer and cook for 5-7 minutes until golden brown. Carefully turn potatoes over and cook until other side is golden brown.
  8. Place Jo Jo's on a baking sheet covered with paper towels and keep warm in a 200 degree oven.
  9. Repeat with remaining potatoes until all Jo Jo's have been cooked.
