Another day in October, another pumpkin recipe! This one's PERFECT for a fall breakfast. Healthy, vegan, loaded with fiber and nuts and warming spices and REAL pumpkin. Oh yes.

Not just pumpkin spice. REAL PUMPKIN PUREE! This granola tastes like real pumpkin too.

It's got some pumpkin spice in it, but not enough to mask the real pumpkiny flavor. The pumpkin puree helps hold the granola too for those extra chunky clusters.

Pro tip: Go fully homemade by following a recipe homemade pumpkin puree and homemade pumpkin pie spice.

What ingredients do I need?

We kept this granola vegan and simple:

  • First, oats: Essential for making classic granola. We use old-fashioned rolled oats. Go gluten-free if you need to!
  • The dry ingredients: Along with the oats, you will need pumpkin pie spice (store bought or homemade), salt, ground cinnamon, pepitas, and pecans.
  • The wet ingredients: Pumpkin puree (Use canned or homemade!), maple syrup, sunflower oil (can sub coconut oil).

Notes:

  • Make sure to use pumpkin puree rather than pumpkin pie filling.
  • Use pure maple syrup rather that hasn't been sweetened.
  • We like sunflower oil for it's nutty flavor, but coconut oil will work as well.

What equipment do I need?

Not much!

  • A large bowl to mix the ingredients in.
  • A wooden spoon (or other large spoon).
  • A sheet pan.
  • parchment paper. This is for lining the sheet pan, as it prevents the granola from sticking to the pan. Plus easy clean up!
  • An oven!

How to make it

If you've never made your own granola, you will be amazed at how simple it is!

  • First, preheat your oven and line a baking sheet with parchment paper.
  • Combine all of the ingredients in a large bowl.
  • Spread it out on the baking sheet and be sure to gently "mash" down the mixture so it's flat, kind of like a large cookie. This helps the granola become chunky!
  • Bake, but don't stir!
  • Let cool, and don't stir!
  • Break up into chunks and store in an air tight container.

How to get super chunky clusters

There are a few things that help this recipe get chunky clusters!

  • The pumpkin puree: it acts as a binder to keep all of the oats and the dry ingredients together.
  • Mashing the mixture together a bit before baking. If it all cooks together, it will cook like a large, thin cookie in the oven.
  • Bake, but don't stir! You want it to hold it's shape while it cooks.
  • Let cool, but don't stir! If you break it up before it's cooled, you will lose some of the clusters.

How to serve pumpkin granola

  • As a snack! Just grab a handful and enjoy!
  • As a cereal. Add your favorite milk (homemade hazelnut milk would great!)
  • As a parfait. We love this with yogurt and some dried cranberries!
  • As a trail mix. Add some dried cranberries, some chocolate chips, or any other ingredient you like in trail mix.

  • Preheat the oven to 325° F. Line a baking sheet with parchment paper.

  • In a large bowl, combine all of the ingredients together. Stir until completely combined.

  • Spread evenly on the baking sheet and gently mash down with the back of a wooden spoon to make it flat, kind of like one giant flat cookie.

  • Bake for 15 minutes. Rotate the pan in the oven and bake another 15 minutes. DO NOT STIR.

  • Let cool without stirring for 30 minutes. Break up into chunks and enjoy!

Store in an air tight container at room temperature for up to 1 week.

    YES to pumpkin recipes! Pumpkin spice is great and all, but I think we keep forgetting about the actual pumpkin to go with it! There is an absolutely wealth of squash varieties to use in my area, but I'm always scratching my head trying to think of new ideas. After all, one squash tends to give you a LOT of food. This looks absolutely delightful, and I'm sure it's every bit as good for breakfast as it is for a snack.
